After collecting my daughter from The Watermill Theatre the other night, I needed to cook something yummy and quick for the supper. I had some minced pork in the fridge, and everything else was either in the store cupboard or the freezer. Everyone loved it!
500g minced pork
2 cloves of garlic - crushed
1" piece of fresh ginger - peeled and grated
1tsp frozen kaffir lime leaves (Waitrose have them in the freezer section near the peas!)
1 red birdseye chilli (from my freezer too!)
salt & pepper
a little oil
Oven at 200C
Put all the ingredients into a bowl and mix by hand until everything is well distributed.
Roll into walnut sized balls and place on a lightly oiled baking tray
Cook in the oven for 15 - 20 minutes, until browning and fragrant.
Serve with rice and salad or green veg.
